Try-Day Friday Mac 'n Cheese Friday, August 31, 2012 ~ 10:00 a.m.

Happy Friday! Or rather, Happy Try-Day Friday! I actually got the idea of "Try-Day" from the fourth hour of the Today Show with Hoda and Kathie Lee (yes, I watch it). I thought it would be a fun addition to the blog on Fridays to focus on one new thing that I'm going to try out over the weekend. This series could be especially great when Dale and I move into our new house in a couple of weeks because I definitely see a lot of DIY projects in my near future :) I'm not sure this will be a weekly, semi-weekly or a monthly blog series, but I figured I would see how it goes.


Oh, and needless to say, this Try-Day Friday is especially great because we are kicking off a long holiday weekend. Woohoo! Yes, it is our last one of the summer though :( I can't believe that summer is over, but I have to be honest, I am sick of this crazy heat! I'm kind of looking forward to Fall. It'll be my first one here in Colorado! Not only that, but we close on our new house next Friday, and we finally get to move in next weekend! We're both very excited; although it's going to be a stressful couple of weeks coming up. Second time moving this year! No fun. Hopefully, it'll be a little easier this time around though.


My husband is actually going out of town to visit his family this weekend, which means one thing: Mac 'n Cheese. Ha, I know, it's so random, right? But it's actually one of my favorite dishes to make, and my husband can't enjoy it! He tends to be a bit lactose intolerant, and cheese, in particular, makes him sick. For that reason, whenever he goes out of town, I take the opportunity to enjoy my favorite meal, full of rich, cheesy goodness. Not only that, but I'm always looking for a new Mac 'n Cheese recipe to try, because I really haven't found "The One" yet. This weekend, I'm going with the best - Martha Stewart! Here are the recipes (one for the special "Cheese Sauce" and the other for the Mac 'n Cheese) I'm going to be trying this Try-Day Friday! Shouldn't be too tough. I'll let you know how it goes! ;)



Try-Day Friday - Mac 'n Cheese Recipe

Macaroni and Cheese recipe

Martha Stewart's World's Best Mac & Cheese
Serves 4


  • Butter or vegetable oil, for baking dish
  • 6 ounces penne
  • 2 cups Beecher's Flagship Cheese Sauce (see recipe below)
  • 1 ounce cheddar cheese, grated (1/4 cup)
  • 1 ounce Gruyere cheese, grated (1/4 cup)
  • 1/4 to 1/2 teaspoon chipotle chile powder

Preheat oven to 350 degrees. Butter or oil and 8-inch baking dish; set aside. Bring a large pot of water to a boil over high heat. Cook penne, according to package direction, for 2 minutes less than recommended on the package. Rinse pasta in cold water; set aside. In a medium bowl, mix together cooked pasta and sauce gently but thoroughly. Pour pasta into prepared baking dish; sprinkle with cheeses and chile powder. Bake, uncovered, for 20 minutes. Let stand 5 minutes before serving.



Beecher's Flagship Cheese Sauce
4 cups of sauce


  • 4 tablespoons (1/2 stick) unsalted butter
  • 1/3 cup all-purpose flour
  • 3 cups milk
  • 14 ounces cheddar cheese, preferably Flagship, grated (about 3 1/2 cups)
  • 2 ounces Jack cheese, preferably Just Jack, grated (about 1/2 cup)
  • 1/2 teaspoon coarse salt
  • 1/4 to 1/2 teaspoon chipotle chile powder
  • 1/8 teaspoon garlic powder

Melt butter in a heavy-bottomed saucepan over medium heat; whisk in flour. Continue whisking and cooking for 2 minutes. Slowly add milk, whisking constantly. Cook, stirring frequently, until sauce has thickened, about 10 minutes. Remove from heat. Add cheeses, salt, chile powder, and garlic powder. Stir until cheese has melted and all ingredients are well incorporated, about 3 minutes. Use immediately or refrigerate up to 3 days. To reheat sauce, place in a saucepan over low heat, stirring frequently, until heated through.
